Green Eggs, no ham, with Avocado

onion, leeks, garlic, baby spinach, lemon, basil, avocado

eggs

pumpkin seeds, sunflower seeds

olive oil, black pepper

  1. Saute onions and leeks in butter or olive oil, add freshly minced garlic and baby spinach, cook until spinach wilts

  2. Make space for eggs and add them to pan, cook until eggs are cooked to your preferred consistency

  3. Top with black pepper, a squeeze of lemon juice, sunflower and pumpkin seeds, and fresh basil

  4. Serve with avocado
