Egg Cups

Preheat oven to 375

Spray muffin pan cups with cooking spray

Cut corn tortillas into 4ths and line muffin cups with them (they don't lay flat at first but will flatten once you start putting the ingredients in)

Add sauteed red onion, chopped cherry tomatoes, arugala and baby spinach

Then add eggs and cheese

Top with a little salt and pepper

Bake for 20-25 minutes

Top with flavored olive oil and lime juice before serving, you could also serve with salsa (we used chipotle flavored olive oil)

Baby Spinach- Calcium, Iron, Beta carotene/Vitamins A, B9/folic acid, C, K

Tomato- Calcium, Potassium, Vitamins A, B9/folate, C, E, and K, Fiber, Lycopene
