Black Eye Pea and Collard Green Stew
Left over thanksgiving ham and turkey?
Make a black eye pea and collard green stew with the left-over meat (also good without the meat!)
onion, garlic, celery, green/red/yellow/orange belpepper, black eye peas, collard greens
Chop 4 cups of veggies- any combination of onion, garlic, celery, green, red, yellow, and orange belpepper, Saute all veggies in olive oil and black pepper
Cook black eye peas according to package directions, or use rinsed canned black eye peas to make this recipe easier
I used a package of collard greens from the produce section- washed these, then boiled them for 3 minutes, then sautéed them for 3 more minutes, or use 2 frozen packages of greens to make this recipe easier, you could also use turnip or mustard greens if preferred
Combine cooked black eye peas, with cooked greens, and sautéed veggies in a soup pot, add left-over thanksgiving meat and 6-10 cups low sodium chicken broth
Season with salt and pepper to taste, serve with red or black rice if preferred

Red bell pepper- Calcium, Iron, Magnesium, Potassium, Beta carotene/ Vitamins A, B2/riboflavin, B3/Niacin, B6/pyridoxine, B9/folate, C, E, K
Yellow bell pepper- Copper, Manganese, Potassium, Vitamins b6/pyridoxine, b9/folate, and C
Black eye peas- Calcium, Iron, Magnesium, Potassium, Vitamin B6/pyridoxine, Fiber, Protein
Celery- Calcium, Copper, Iron, Manganese, Phosphorus, Potassium, Vitamins A, b9/folate, and K, Fiber
Collard Greens- Calcium, Iron, magnesium, Phosphorous, Potassium, Zinc, Vitamins A, b9/folate, C, E, and K
Garlic- each clove contains a small amount of Calcium, Iron, Magnesium, Manganese, Potassium, Vitamins C, E, K, and Zinc
Onion - Calcium, Magnesium, Potassium, Vitamins B6/pyridoxine and C, Fiber
