Quinoa Berry Bake


2 bananas

1 cup quinoa, you can also use 1/2 cup quinoa with 1/2 cup old fashioned oats

2 tbsp chia seeds

2 cups almond or oat milk

2 tsp cinnamon

2 tsp vanilla extract

1 1/2 cups berries


  1. Mash bananas, Add the rest of the ingredients- other than the berries, whisk/mix well, then add berries

  2. Spray baking dish with baking pam and Bake at 375 for 60 minutes

  3. Top with fresh berries, nuts, and some greek yogurt

Make ahead Toasted Oat topping for yogurt parfaits with fruit


Melt butter with cinnamon in sauce pan on stove, add raw oats, any nuts (pecans, walnuts, almonds...), and pumpkin seeds, toast in sauce pan on low heat/ until brown and fragrant- stirring frequently- this only takes a couple of minutes


Store these in an air-tight container if making ahead, these will stay good for 3-4days

Add toasted oats and nuts to greek yogurt and fruit for a parfait, top with honey and chia seeds

Overnight Oats

Combine 1/2 cup rolled oats, 1/4 cup yogurt, 1/2 cup almond milk, 1 tbsp chia seeds, and 1 tbsp honey in a glass or jar

Cover and place in fridge overnight

Serve topped with berries and nuts

Oatmeal Applesauce Muffins
(makes ~28 muffins)

3 eggs
1 tbsp vanilla extract
1 cup unsweetened applesauce
1 cup brown sugar
1 sliced banana
1/2 cup blueberries
1/4 cup mini semi-sweet chocolate chips
1/4 cup pecans
1/4 cup walnuts

5 cups old fashioned oats
1 tsp salt
3 tsp baking powder
1/4 cup chia seeds
1 tbsp cinnamon
2 1/2 cups 1% milk

1. Preheat oven to 350
2. In a large bowl, combine ingredients: eggs, vanilla, apple sauce, and brown sugar, mix well, then add bananas, berries, nuts, and chocolate chips
3. In another bowl, combine oats, salt, baking powder, chia seeds, and cinnamon
4. Combine both bowls of ingredients, mix well, then add milk
5. Spray muffin cups with baking pam
6. Bake 35-40 minutes
