Fancy Fruit Salad with Cucumber and Radishes
Layer the following in a glass bowl: Blueberries, Strawberries, Watermelon, Cucumber (I used baby cucumbers), and thinly cut Radishes
Top with Mint, Feta or Goat cheese crumbles, and a little coconut white balsamic vinegar or fresh lemon or lime juice
Blueberries - Calcium, Potassium, Vitamin D, Fiber
Cucumber - Magnesium, Manganese, Potassium, Vitamins C and K, Fiber
Radishes - Radishes- Calcium, Iron, Manganese, Potassium, Vitamins B1/thiamine, B2/riboflavin, B3/niacin, B6/pyridoxine, B9/folate, and C
Strawberries - Copper, Iron, Magnesium, Manganese, Phosphorus, Potassium, Vitamins B1/thiamine, B2/riboflavin, B6/pyridoxine, B9/folate, C, E, and K
Watermelon - Calcium, Magnesium, Phosphorous, Potassium, beta carotene/Vitamins A, B9/folate, C, Fiber, Choline, Lutein, Lycopene, Phytosterols
