Pretty Vegetable Platter
Pick up a whipped feta or hummus or taziki dip from your local greek/lebanese restaurant
Make a cucumber lime chutney dip
Serve these dips with your choice of colorful vegetables
Cucumber Lime Chutney
1 avocado, mashed
1/4 cucumber, thinly sliced and finely chopped
1/3 jalepeno, finely chopped
juice of 1 lime
1 minced garlic clove
Mix well
(add cilantro, mint, and/or ginger to give this chutney more of a pop)
Serve with colorful carrots, asparagus, celery, purple cauliflower, cherry tomatoes, radishes, squash, zucchini…
