Oatmeal Applesauce Muffins
(makes ~28 muffins)
3 eggs
1 tbsp vanilla extract
1 cup unsweetened applesauce
1 cup brown sugar
1 sliced banana
1/2 cup blueberries
1/4 cup mini semi-sweet chocolate chips
1/4 cup pecans
1/4 cup walnuts
5 cups old fashioned oats
1 tsp salt
3 tsp baking powder
1/4 cup chia seeds
1 tbsp cinnamon
2 1/2 cups 1% milk
Preheat oven to 350
In a large bowl, combine ingredients: eggs, vanilla, apple sauce, and brown sugar, mix well, then add bananas, berries, nuts, and chocolate chips
In another bowl, combine oats, salt, baking powder, chia seeds, and cinnamon
Combine both bowls of ingredients, mix well, then add milk
Spray muffin cups with baking pam
Bake 35-40 minutes
