Zucchini Frittata

Served with sliced avocado and a green salad

eggs, zucchini, shallots, garlic, salad greens, micro greens, manchego cheese

Saute shallots, garlic, and zucchini noodles

Then pour in eggs, seasoned with black pepper, add a little milk

We used a super greens salad mix with red and green swiss chard, tat soi, spinach, and arugula

Top with microgreens and manchego cheese

Salad dressing; lemon juice, olive oil, red wine vinegar, honey, and black pepper

Avocado- Calcium, Iron, Magnesium, Potassium, Vitamins B6/pyridoxine, B12/Cobalamin, Vitamin C, E, and K, Fiber

Garlic- each clove contains a small amount of Calcium, Iron, Magnesium, Manganese, Potassium, Vitamins C, E, K, and Zinc
