Happy Mardi Gras Y'ALL

The chemicals that give food their colors have anti-inflammatory and anti-oxidant properties

- Green - Chlorophyll - stimulates the immune system, provides energy, antioxidant properties

- Yellow - Carotenoids - antioxidants, boost immune system

- Purple - Anthocyanin- anti-inflammatory, antimicrobial, Polyphenols - antioxidants and anti-inflammatory

Mardi Gras inspired bowl

-Season brocolli and cauliflower florets with avocado or olive oil, turmeric, cumin, curry, coriander, and black pepper

-Bake at 425 for 25minutes or cook in the air fryer

-Top with a squeeze of lime

-Cook black lentils according to package instructions

-Then place in pan with purple cabbage and olive oil

-Saute until cabbage is cooked

-Wash kale and tear off tough stems, sprinkle with black pepper

-Add olive oil and a squeeze of lime

-Mix well while massaging with hands until kale is soft

Combine all in a bowl

Serve with cucumber lime chutney

1 avocado, mashed

1/4 cucumber, thinly sliced and finely chopped

1/3 jalepeno, finely chopped

Juice of 1 lime

1 minced garlic clove

Mix well

(you could also add cilantro, mint, and ginger to give this chutney more pop)

Purple cabbage- Calcium, Iron, Magnesium, Potassium, Vitamin A, B1/thiamine, B2/riboflavin, B6/pyridoxine, and C, Fiber

Cauliflower- calcium, magnesium, potassium, vitamin b6/pyridoxine, b9/folate, vitamins c and k, fiber


Cucumber- Magnesium, Manganese, Potassium, Vitamin C, Vitamin K, Fiber

Garlic- each clove contains a small amount of Calcium, Iron, Magnesium, Manganese, Potassium, Vitamins C, E, K, and Zinc

Jalepeno- Potassium, Beta carotene/ Vitamin A, Vitamins B9/folate, C, and K


Kale- Calcium, Copper, Kaempferol, Magnesium, Manganese, Potassium, Quercetin, Beta carotene/ Vitamin A, Vitamins B6/pyridoxine, C, and K, Fiber, Protein

Black Lentils- Copper, Iron, Magnesium, Manganese, Potassium, Phosphorous, Vitamins B1/thiamine, B3/niacin, B5/pantothenic acid, B6/pyridoxine, B9/folate, Protein, Fiber
