Greens and Grains bowl with Chicken

Glucose Goddess Greens and Grains Fall Bowl with Chicken for 2

chicken, brocoli, asparagus, shallots, baby spinach, kale

quinoa, lemon, pistachios, pomegranate seeds

olive oil, coriander, black pepper

Season chicken, broccoli, and asparagus with black pepper, coriander, olive oil, and lemon juice

  1. Bake chicken at 425 for 30 minutes

  2. Add the broccoli and asparagus for the last 20 minutes

  3. Cook quinoa according to package instructions

  4. Saute shallots in olive oil, add cooked quinoa, baby spinach, and kale to pan - Cook until greens are wilted and quinoa is a little crunchy - this only takes a few minutes

  5. Combine all in a bowl

  6. Top with pistachios and pomegranate seeds, a little garlic flavored olive oil, and a big squeeze of fresh lemon

Pomegranate seeds - Calcium, Iron, Potassium, Vitamins A and C, Fiber

Quinoa - Manganese, Magnesium, Phosphorus, Vitamin b9/folate, Zinc, Protein, Fiber
